Minced Diet
After reviewing the case study about Stuart, a 75 year old man who had a stroke 2 months ago. The one of the two foods that are not compliant with his minced diet is cream cheese. The texture of cream cheese is sticky and gummy which would make it hard for Stuart to swallow (DeBruyne & Pinna, 2022). I would recommend using cottage cheese instead because it is moist and soft texture which will be easier texture to swallow. It also contains similar nutrients like calcium. The second food that is not compliant with his minced diet is pecan pie. According to DeBruyne & Pinna (2022), crumbly and sticky food textures are harder to swallow. Foods with more than one textures are not recommended for patients who are on a dysphagia diet (DeBruyne & Pinna, 2022). I would recommend that his family blend up the pie, so it has one texture consistency, if he really enjoy the pecan pie.
Increase the calories
One of the two changes that could be made to increase the calorie of Stuart’s meal includes incorporating drink replacement formulars such as ensure or boost to provide him many calories and nutrients. He can also add thickener fluid if he requires a different texture. The second food I would change includes French fries. I would recommend substituting french fries with mashed potatoes with butter and milk because it has a moist texture which is easier to swallow, and it also contains a high number of calories.
Increase food intake
According to DeBruyne & Pinna (2022), adding different varieties of colour into his meals can help make the food appealing because minced diet can be repetitive due to always having the same texture. Therefore, one of the two changes that could increase Stuart’s intake of foods at meals includes incorporating mashed sweet potatoes into his meals because the colour is more vibrant which could be more appetizing to eat (DeBruyne & Pinna, 2022). The second change that would increase Stuart’s intake of food include changing his plate setting, silverware, and presentation of the meal to be more attractive. This could help make the meal more appealing which will increase the likelihood that he will eat, which may help increase his intake of food and maintain his weight (DeBruyne & Pinna, 2022).
